Fixes and polish for the iPhone companion connection.

Accented characters and emoji now render correctly on your iPhone. The phone's terminal connection was missing a UTF-8 locale, so tmux replaced every accented character with an underscore. If your phone still shows underscores after updating, relaunch Orb on the Mac so the connection picks up the fix.
Smoother terminal streaming while you scroll on the phone: output now flushes at up to 90fps during an active scroll and returns to the battery-friendly cadence the moment you stop.
Terminal sessions started for the phone now inherit the same terminal environment defaults (colors, locale) as sessions opened on the Mac.
